Koi Gold Junmai Daiginjo is one of the most rare and hard to get sake from Japan. The Nishikiki Koi Golden was created to celebrate the dawn of the Reiwa era. Presented in an exclusive Takata Yaki bottle – a rare Gifu craft that sits between porcelain and ceramic – the vessel was chosen for how beautifully it interacts with the sake. Each piece is hand-finished with gold leaf, evoking the elegance of the Koi carp.
This Junmai Daiginjo is brewed from the prized Koshitanrei rice of Niigata. It is a competition sake, carefully filtered by gravity in small cloth bags (fukurodori), then matured in bottle at -2°C. The result is a sake of rare finesse: fresh and pure on the palate, with aromas of citrus, pear, apple and melon. Acidity is well-judged, lightly sweet, and perfectly balanced, with a long finish that preserves the umami depth of the Koshitanrei grain. Only 200 individually numbered bottles have been released by brewmaster M. Tanaka.
Imayo Tsukasa, the brewery behind this creation, was founded in 1767. Originally an inn and sake merchant, it became a full brewery in the Meiji era. Located in Nuttari – the historic centre of Japan’s fermented traditions such as miso, soy sauce and sake – Imayo Tsukasa today represents the very best of Niigata’s brewing heritage. Its style is known as tanrei karakuchi: dry, clean and deeply refreshing.
