Tokugawa Ieyasu Daiginjo is the special sake competition sake that Maruishi Jozo creates for the NRIB (National Research of Sake Brewing)  "Annuel Japan Sake Awards". It is a competition in which the Toji, or master brewer, and his team show what they can do, sending in their most beautiful and best sake that they have made especially for this occasion. A sake that is at its peak around May for this competition, but nowadays with special cooling is also optimal afterwards. In the past, these sake were not sold, but for a number of years now, a few breweries have been marketing the rest of these special batches. Sake with a very limited edition because this is only a batch that is normally mainly served to special guests in the brewery. The sake itself has a beautiful fruity and floral aroma. On the one hand a power house of sensational scents and flavours, on the other can be subdued with many layers. When you smell and taste well, all the well-known fruits come your way one by one, the floral notes are for example blossom, fennel, anise, white roses but there is so much more. Morabito 1971 Daiginjo is a unique sake made from special Yamada-nishiki that is grown on the famous rice fields of Nishioku, Yokawa district in Hyogo. The Toku A quality Paddy fields, which for rice is comparable to the so-called grand cru vineyards for wine, provide a blend of Toku-jo and Toku-to rice for this sake. In the nose and on the pallet subtle notes of pear, melon, red apple, Citrus and white blossom. Very nice balance with an enormous depth, fine acidity, light minerality. Round full taste with fine tannins, slightly vanilla and honey. A super long intense clean finish completes this sake. Of course, there is the special sake rice grown on iconic ground, but also the place where the sake is brewed. On the fifth floor of Nihonsakari there is a micro brewery that is completely manually responsible for this masterpiece. The Tamba Toji or master sake brewer uses a koji with intensive conversion of unfermentable starch into fermentable sugars. He blends the Souhana Junmai Daiginjo that has matured for 6 months in French oak with this sake. In addition, he uses two different yeasts The name Morabito comes from a French perfume and fashion house called Morabito, founded by Jean-Baptiste Morabito. In 1971, Madame Pompidou offered a Morabito VENDOME crocodile bag to the Japanese empress during an official visit. The design on the bottle is inspired by this iconic bag.

Houka Vintage 2025 Junmai Daiginjo is a limited-edition sake with only around 428 bottles released, presented in an elegantly designed 720ml bottle. Brewed from three sake rice varieties grown in Nagano Prefecture—Kinmon Nishiki, Yamada Nishiki and Takane Nishiki—it carries the signature of the brewery’s pasteurisation method, which preserves a subtle gassy character. The sake is then aged for about six months at low temperature, developing into a refined and distinguished Junmai Daiginjo.Toshimaya Brewery in Nagano has been producing artisanal sake since 1891 on the shores of the mystical Suwa Lake. With an annual production of just 1700 koku, it is a true craft brewery led by Toji Komatsu Yukio and guided by the vision of the young president. The brewery uses water sourced from Mount Hachi Buse, carefully balancing minerals such as magnesium and potassium to suit the yeast starter. The rice is cultivated locally by contracted farmers, creating a strong bond between the growers and the brewer, a connection proudly celebrated in the tasting room where the farmers’ portraits are displayed. Alongside classic rice types like Miyama Nishiki, Yamada Nishiki and Kinmon Nishiki, local varieties including Takane Nishiki, Shirakaba Nishiki and Hitogokochi are also used. The brewery is further distinguished by a private collection of Samurai armour housed in a hidden museum and has earned repeated gold medals at the International Wine Challenge.

Hourai Super 18 Junmai Daiginjo is created from Yamada Nishiki rice of the highest grade, harvested in the Miki region of Hyogo Prefecture. The grains are polished to just 18%, leaving only the pure core shaped like a crystal sphere. With complete dedication, the mash is brewed and carefully pressed at low temperature using the traditional momen shibori method. The sake is pasteurised early in the bottle and preserved at zero degrees to maintain its finesse. Because of its fragile nature, it should always be stored in the refrigerator at a temperature of six degrees or lower. Allow the sake to warm gently to around twelve degrees for ten minutes before drinking, and discover how its aromas and flavours transform as the temperature rises. Watanabe Sake Brewery in Gifu is the maker of this refined sake. Established in 1850 in Hida Furukawa, the brewery belongs to the historic White Wall district, where traditional breweries with white façades stand side by side along a narrow canal. Following the title of best brewery in 2021 and the many international awards that followed, Watanabe has been recognised as one of Japan’s finest. With a growing focus on the global market, their sake now carry both Vegan and Kosher certification.

Maruishi has brewed 2 very special sake with the most special the Nito Yamada-chiki 18. Only 1500 bottles were made of this sake, with only 36 ending up in Europe. The Sake belonged to the group of Super Junmai Daiginjo because of the low polishing content of the rice, a non -official title that has been recognized by experts. In the nose, this very complex sake has many different fruit and floral tones where pear, melon, orange, anise and fennel come out the most. When you taste the sake you notice the layers of different flavors that continue to follow each other. The centrifuge machine first introduced into Japan’s sake industry on a commercial basis by DASSAI has played an important role in terms of technical challenges for Dassai in pursuit of better sake. Sake extracted by centrifugation has the “quality of sake without any unpleasantness”. It carries a refined gorgeousness and delicacy. On the other hand, when Dassai 23 mash is put into the centrifuge, the transparency of it alone seems too fine. Therefore, in order to give it a wider range of qualities present in alcoholic beverages, it was blended with sake pressed from the Yabuta. However, with the improvement of brewing techniques of Dassai artisans in recent years, it has become possible to create sake with a range of flavours while maintaining its transparency by controlling the fermentation process meticulously. The representative Dassai 23 Centrifuge now relies on the evolution of this technology and will no longer be blended, but instead use only Dassai 23 extracted via centrifugation resulting in final product that is pure yet has a refined transparency and delicacy at the same time. For this sake the best Yamada-Nishiki rice is used, polished down to 23% of the original grains.

Of course, the sake is aged in ex-Chivas Regal vessels that have been shipped from Scotland to Japan, but they also went one step further and brought the blendexpertise of Chivas Brothers. Link 8888 is a mix of Sake made with Yamadabo, Yamada-chiki Sake rice and Kuromai, a kind of brown rice. Each sake was matured individually in American white oak barrels of 12+ years ex-Chivas, and later mixed to create link 8888. The 8888 in the name refers to the fact that the Masuda Toyama brewery is 8,888 km away from the Strathisla-Distillery of Chivas Regal in Kieth, Scotland.Best to serve this sake alone with your nearest family or closest friends at room temperature or cold.To enjoy this wonderful sake fully it is best served in the special ISOS sake glass from Sophienwald.

We also have also have the  Hakkaisan Sparkling Nigori and Daiginjo in our assortment.Niigata is the area with the most active breweries in Japan, a total of 95. In the prefecture, most of the rice of Japan is grown, including many gohyakuman goku and Koshihikari. When we look at the number of liters of sake that is brewed, Niigata comes in third place after Hyogo and Kyoto. Typical of sake from Niigata is that it is dry, after Kochi the driest in Japan. It is often light, very pure and pure with sometimes a special aftertaste called Kire. Kire finish is when you immediately have a clean feeling in your mouth after a sip Sake, there is no finish which would normally mean that this would be lesser sake but the opposite is true. The creation of a Kire finish is craftsmanship of a master Brouwer de Toji. Well -known breweries in the area produce Sake under the brand names Kubota, Kikusui, Ichishima, Homare Kirin, Koshino Kanbai, Yoshinogawa, Shirataki, Katafune and Nechi. The area used to be called Echigo located in the Chubu region on Honshu Island. And is surrounded by three mountain ranges on land and the Japanese Sea on the other side with Sado Island off the coast. In addition to sake and rice, the area is also known for the Koi carp with the best quality, the largest selection and even the largest Koi trading area in the world. Symbol of the area is the tulip as flower, the Japanese Camelia as a tree and the Japanese ibis as a bird. The earthquake destroyed dozens of breweries in Hyogo and some never started brewing again. The main brewer using this rice, Kenbishi Brewery was heavenly damaged during this earthquake and were not able to produce sake so another brewer stood up to purchase the Aiyama rice which was mend for Kenbishi. This brewery was Takagi brewery from Yamagata brewing under the name of Juyondai. Juyondai like Denshu and nowadays The Noguchi Institute are cult breweries and this way Aiyama rice became famous throughout Japan and is nowadays getting more fame worldwide.
