Koshu sake is sake aged in bottles, tanks, barrels, or amphorae and must are aged for at least one year. Nowadays is two year more the standard. Characteristic are the more ripe notes of honey, toast, dried fruit, nuts, caramel and the colour from gold to even amber. Many matured sake are sweet in taste, with the sugars ensuring that the sake has a good shelf life. 


Despite that Koshu sake is almost always called that when it is at least a year old and also has an aged character with ripe notes, although there is also a group where the sake has been aged in tanks or bottles at extremely low temperatures. In this way, different layers of flavour are developed, as it were, increasing complexity while preserving the fruit notes. Often these are Junmai Daiginjo and Daiginjo from top houses, with Born from Fukui being the best known.

Watanabe (Tochigi)
Kyokuko Rosso Kimoto - 720ml
Kyokuko Rosso Kimoto is one of the most extreme and unique sake produced in Japan. Rosé or red in this case makes it special. Kimoto starter is a very ancient way to make a yeast starter which gives normal a higher acidity to the sake. Polishing ratio of 99% so the rice has been milled down only 1% is extraordinary since almost all rice for sake producing will be polished at least 10%. Adding oak maturating for a year which is seldom used for sake adds to another unique aspect of this sake. If you are not into sake please do not try this but if you are and like rough, Umami, oak and unique Flavors this might be your pick. We tried this at tastings and people either loved or hated it but everyone agreed on one thing, this is more than extreme extraordinary. Best served cold or room temperature in a wine glass. Dishes full of Umami like cheese are great in combination with this sake.

Aizu Homare (Fukushima)
Long-aged Koji 2005 - 375ml
Long-aged Koji Sake from Aizu Homare was brewed in 2005 with 100% koji rice. Although the brewing process is the same as normal sake, apart from the use of only Koji rice, the taste is exceptional and balanced sweet with a refreshing sour in the aftertaste. During the ripening process, a unique aroma, the amber color and the full taste, are created, which are real characteristics of ripened sake.This sake can be served at different temperatures showing a unique caracter with each temperature served.

Endo Brewery (Nagano)
Keiryu Dai-Koshu 38yrs - 720ml
Keiryu Dai-Koshu Junmai from Endo Shuzo from Nagano is a special Junmai Sake which was brewed around 1986 and is therefore aged for 38 years. Because of this ripening, the sake has gained a beautiful golden color and an enormous complexity. Rich elegant nose with rye, apricots, banana bread, coffee spaces. Ahorn syrup, fried sweet potato, roasted nuts, miso, soy sauce fine silky aftertaste. Limited available. This sake has won a gold medal at the International Wine Challenge in addition to a number of other international prizes.

Kinmon Akita (Akita)
Yamabuki Gold Koshu 12Yrs - 720ml
Yamabuki Gold Koshu has a beautiful dark golden color, seasoned fruit, cardamom, dried raisins, complex, soft, full of umami and a wonderfully perpetual aftertaste. Due to its sweetness and complexity, the sake is extremely suitable as a replacement for a dessert wine, combinations with blue -fungus cheese and chocolate are surprisingly spectacular. This sake when it is served at room temperature or cold in a white wine glass.

Choryo Jukusei Yoshino Taru 1992 - 500ml
Choryo Jukusei Yoshino Taru Sake 1992 is an attractive Amber colored cedar wooded sake that is eliminated for a long period at low temperature. This undiluted sake brewed of no less than 30 years old has a unique rich robust scent and soft mild taste. Brewed in Nara by Choryo Shuzo one of the better sake brewers in the region. The sake can be served during a dinner but is also beautiful with dried figs, chocolate. The sake is best served cold or room temperature in a wine glass.

Masuda Shuzo - MASUIZUMI (Toyama)
Masuizumi Super Special - 720ml
Masuizumi Super Special is a very unique and exceptional sake! The Masuizumi Super Special Junmai Daiginjo is brewed by Masuizumi and matured in oak Chassagne-Montrachet barrels previously used by Domaine Ramonet for their white wine. Try this sake chilled first and enjoy how its rich flavour evolves as the temperature rises. An elegant taste influenced by the oak barrels, with notes of vanilla, nuts, and a delicate, rich, complex depth. Layers of dried currants, honey, and caramelised orange peel add great depth and character. Dry, with a medium to full-bodied and powerful flavour, depending on the serving temperature. This sake is best enjoyed in the special Sophienwald sake glass.

Yamanashi Meijo (Yamanashi)
Shichiken Hakushin Junmai Daiginjo - 750ml
Shichiken Hakushin Junmai Daiginjo is a true masterpiece, awarded  as “Champion Sake” and best sake from Japan at the International Wine Challenge 2025, chosen from 1.476 entries by World most important sake experts. The name Hakushin means white hart, or white core and comes from the low polishing ratio of just 27% meaning only the pure white starch or Shinpaku was left over after the polishing.The sake has been matured at minus 5 degrees for one year.Subtle elegant nose with tones of white peach, melon and white pear. The palate is full with different flavors which comes in layers and is very complex. The purity of the spring water used makes the sake very clean and friendly. The long lingering finish is endless.This sake is best served cool in the special Sophienwald sakeglass.

Hakkaisan (Niigata)
Hakkaisan Kongoshin Winter - 800ml
Limited available from on special order.Hakkaisan Kongoshin Winter is the crown jewel of one of the most famous brewers in Japan. Highly limited amount of bottles from this delicate complex super sake.This sake can best be served cold in a wine glass. We also have also have the  Hakkaisan Sparkling Nigori and Daiginjo in our assortment.Niigata is the area with the most active breweries in Japan, a total of 95. In the prefecture, most of the rice of Japan is grown, including many gohyakuman goku and Koshihikari. When we look at the number of liters of sake that is brewed, Niigata comes in third place after Hyogo and Kyoto. Typical of sake from Niigata is that it is dry, after Kochi the driest in Japan. It is often light, very pure and pure with sometimes a special aftertaste called Kire. Kire finish is when you immediately have a clean feeling in your mouth after a sip Sake, there is no finish which would normally mean that this would be lesser sake but the opposite is true. The creation of a Kire finish is craftsmanship of a master Brouwer de Toji. Well -known breweries in the area produce Sake under the brand names Kubota, Kikusui, Ichishima, Homare Kirin, Koshino Kanbai, Yoshinogawa, Shirataki, Katafune and Nechi. The area used to be called Echigo located in the Chubu region on Honshu Island. And is surrounded by three mountain ranges on land and the Japanese Sea on the other side with Sado Island off the coast. In addition to sake and rice, the area is also known for the Koi carp with the best quality, the largest selection and even the largest Koi trading area in the world. Symbol of the area is the tulip as flower, the Japanese Camelia as a tree and the Japanese ibis as a bird. In the winter there is a lot of snowfall which makes it an ideal ski area together with the many mountains. The same snow provides a huge water source for brewing sake.
