Shichiken Hakushin Junmai Daiginjo is a true masterpiece, awarded  as “Champion Sake” and best sake from Japan at the International Wine Challenge 2025, chosen from 1.476 entries by World most important sake experts. The name Hakushin means white hart, or white core and comes from the low polishing ratio of just 27% meaning only the pure white starch or Shinpaku was left over after the polishing.
The sake has been matured at minus 5 degrees for one year.

Subtle elegant nose with tones of white peach, melon and white pear. The palate is full with different flavors which comes in layers and is very complex. The purity of the spring water used makes the sake very clean and friendly. The long lingering finish is endless.

This sake is best served cool in the special Sophienwald sakeglass.
