Sho Shin Sake

The Netherlands’ first sake brewery

Sho Shin Sake is an independent sake brewery based in Oosterbeek, the Netherlands. What started as a shared passion between Dutch friends has grown into a craft brewery with a deep appreciation for Japanese flavour, culture and brewing tradition.

The brewery was founded by Arno and Reinout, later joined by Bart. Together, they immersed themselves in the detailed craft of sake brewing, exploring every part of the process: rice, koji, yeast, temperature, timing and maturation. Their journey also took them to a family-owned sake brewery in the mountains of Yamagata Prefecture in northern Japan, where they gained hands-on experience in traditional sake production.

Sho Shin Sake is located in a 19th-century building in Oosterbeek, a historic artists’ village surrounded by forests, rivers and natural springs. The local water contains the right balance of minerals, making it well suited for brewing refined sake. For other essential ingredients, including polished sake rice, koji-kin and special sake yeasts, Sho Shin Sake works with skilled Japanese producers.

Sustainability is also an important part of the brewery’s approach. By importing dry ingredients and adding water locally, unnecessary transport is reduced. The brewery is energy neutral, uses only natural ingredients and follows a zero-waste mindset.

Sho Shin Sake offers a Dutch interpretation of an ancient Japanese tradition: brewed locally, with respect for the original craft and a clear character of its own.

Sho Shin First Batch BY26 Junmai - 750ml

The very first brew from the Netherlands’ first sake brewery, Sho Shin Sake in Oosterbeek.Handcrafted in small batches using pure water from the Veluwe and premium ingredients from Japan. A slow fermentation at low temperature creates a fruity profile of stone fruit and banana, balanced by warm notes of toasted grain and steamed rice. Expect gentle acidity, pronounced umami and a pleasant, lingering finish.After being pressed by hand in a traditional fune press, the sake is pasteurised in the bottle at a low temperature. The bottles are then left to rest in a cool cellar.A beautiful match with grilled fish, light meat dishes, or simply enjoyed in good company. Sho Shin Second Batch BY26 Junmai Mizumoto - 750ml

The second pressing from Sho Shin Sake is a truly distinctive sake. Brewed using the centuries-old mizumoto method with natural lactic fermentation, it develops a surprisingly dry and fresh character with higher acidity and pronounced notes of lychee, strawberry, yoghurt and rice.Entirely handcrafted using pure water from the Veluwe. After pressing, the unpasteurised sake is matured in tank at a very low temperature. Immediately after bottling, it is pasteurised once (namachozo) to preserve its freshness and lively character.A great match with richer dishes, grilled shellfish or a cheese board. Serve chilled, or allow it to gradually reach room temperature while drinking. Small batch, limited availability.
